This irresistible rice square recipe is free of the corn syrup-laden marshmallows usually used, and instead calls for the mellower sweeteners maple syrup and brown rice syrup. Truth be told, we used agave nectar instead of the maple syrup listed in the recipe because I prefer it’s milder flavor in dishes that I don’t want to have a strong maple syrup taste. These turned out golden, gooey, sweet, light, and crunchy, and sent me straight to Happyland.

We also added a bit of almond extract to our squares, which was pretty yummy. 🙂
Almond extract does sound like a great idea! Right now on this experimental diet of mine, I’m completely all grain free–even rice. Sad to say. Hope it works!
OMGosh, I’m sorry! You said grain-free and I looked up grain-free rice bars on Google to try to find an option and then I got completely off track when I found that Erewhon cereal. Augh! I am super proud of you for sticking to your grain-free diet, that is sooooooo healthy. I should probably do the same. 😉
