These Paradise Sunset Parfaits are a great summertime treat from Hannah Kaminsky’s yummy cookbook Vegan Desserts, page 96. There are so many layers in this sunset. From bottom to top: caramelized pineapple, mango mousse, macerated (boozy) raspberries, and vegan whipped cream. This nice, cool dessert would taste great at any time of day, not just at sunset! 😉
Parfait Fact: The word parfait is French and literally means “something perfect.”
The photo stood out great with the blog theme colors, a slash of red and yellow here and there! Can you tell me basically the technique for caramelized pineapple? The mango mousse sounds oh so fantastic! I’ll bet I could do that with coconut cream.
Greetings HSD! Thank you very much for your kind words, you are so sweet. 🙂 The caramelized pineapple is delicious and easy to prepare. You just need to melt 1T margarine or coconut oil in a pan over medium heat. Then stir in 1/3 c. brown sugar and stir until dissolved. And finally, you add 2 c. cubed pineapple and cook for 5-10 minutes, stirring occasionally, to caramelize the pineapple and cook off the excess liquid. I’ll bet you’re right too, making the mango mousse with coconut cream would be absolutely deelish!

What a lovely and yummy-looking dessert! I think I’d be too lazy to make all those layers, but as another commenter said, the mango mousse alone would be wonderful. Love the photo with the bamboo spoon for that fun, tropical look!
