We were thrilled to enjoy another delicious popup from the wonderful Hella Vegan Eats at Virgil’s Sea Room recently. It’s always really hard to decide what to order from them because it is all so darned tasty, but here’s what we tried this time (descriptions from the HVE menu):
Pistachio Pesto “Chicken” Sandwich: Served on Housemade Sprouted Seed Bread with Blistered Cherry Tomatoes and Cashew Cream
“Chicken” N Waffles: Fluffy Cornmeal Waffle served with Panko-Crusted Layonna’s Market “Chicken,” Maple Syrup, Maple Butter
Hunter S. Tacos (Gluten-Free): Savory Scramble, Wild Turkey & Maple -Glazed Rhizocali Tempeh, Housemade Hollandaise Sauce, Parsley served on two Corn Tortillas
Hella Vegan Eats just got a food truck so look out Bay Area, here they come… and I’m “hella” hungry!
Pop-up Restaurant (from Wikipedia): Pop-up restaurants, also called supper clubs, are temporary restaurants. These restaurants often operate from a private home, former factory, or similar and during festivals.

The Pistachio Pesto “Chicken” Sandwich sounds so yummy! I’ve made pesto with walnuts, but never with pistachio’s. I’ll have to try that! Celeste 🙂
