Almond/raspberry is one of my favorite flavor combos, and this recipe from Vegan Diner by Julie Hasson (page 147) really delivers!
This is an easy to make almond/raspberry sheet cake recipe with creamy almond/vanilla icing. I also arranged fresh raspberries all over the top of the cake so it would have more fresh fruit on it and I would feel less guilty about eating so much tasty cake. This would be perfect for dessert, afternoon tea, or a birthday party. Next time I will double the icing recipe though, because I like a lot of icing on my cake, heh heh.
