This wonderful, moist & chewy cookie recipe called for pumpkin puree so instead of using canned, we roasted a whole little sugar pie pumpkin, peeled the skin off, pureed the pumpkin flesh for the cookies, and roasted the seeds to enjoy as a salty snack.

The fresh pumpkin, chocolate chips, and spices were soooo good that they made eating a cookie taste like eating a chocolate-drizzled pumpkin pie! We enjoyed these with some ice cold hemp milk.

Pumpkin Fact (from Wikipedia): The Irish brought this tradition of pumpkin carving to America! The tradition originally started with the carving of turnips. When the Irish immigrated to the U.S., they found pumpkins a-plenty and they were much easier to carve for their ancient holiday.

These incredibly yummy cookies are reminiscent of the famous “Toll House” cookie recipe, but with they contain no cholesterol or lactose! You can safely eat the dough without fear of contracting salmonella poisoning, too, since there are no raw eggs in it. Moist, chewy, and choco-licious, this is going to become our go-to chocolate chip cookie recipe. We substituted spelt flour for unbleached wheat flour for a lower gluten version.
